Two Knights Templar

The seal of the Grand Masters of the Order of the Poor Warriors of Christ and the Temple of Solomon (better known as the Templars) depicted, on the one hand, two knights on one horse, and on the other, the dome of the building.

It is logical that the dome of the temple is depicted on the seal of the knights of the order of the temple, and that is why two knights saddled one horse?
Here is how the creation of the Order of Wilhelm, the Archbishop of Tyr, describes the Historia Rerum in Partibus Transmannis Gestarum in his chronicle:
Several noble knights, people of true believers and God-fearing, expressed a desire to live in strictness and obedience, to forever abandon their possessions, and, giving themselves into the hands of the supreme ruler of the church, become members of the monastic order. Among them, the first and most famous were Hugh de Payne and Godfroy de Saint-Omer.
These Hugh de Payne and Godfroy de Saint-Omer were, according to legend, so poor that they had one horse for two. Since the Templars were required to give up their possessions and a very modest life, this image became a successful symbol of the poverty of the order. There are other versions - for example, that one of the depicted knights rescues a wounded second on his horse. And then there is the following story, which the chronicler Saladin Bahauddin ibn Shaddad tells:
On June 7, 1192, an army of crusaders launched an attack on the Holy City (then occupied by Saladin). The spies of Richard [The Lionheart] reported that a caravan with supplies for Saladin’s army was approaching from Egypt ... when Richard learned that the caravan was near ... a thousand horsemen came forward, and everyone sat in front of him a foot warrior ... at dawn he attacked a caravan, taking him by surprise. Islam was dealt a serious blow ... Three thousand camels, three thousand horses, five hundred prisoners and many military supplies were captured. Never was Saladin so saddened or so worried.
True, here, as we see, two warriors appear on one horse, but still not two knights, but one knight and one foot soldier.
Hugh de Payne became the first Grand Master of the Knights Templar and led the order for almost twenty years, until his death in the Holy Land in 1136.

Whether he used the image of two knights on one horse for his seal is unknown, but it is known that it was precisely used on the first known print of the Grand Master — owned by Bertrand de Blancheflore, the 6th Great Master, who held this position in 1156-1169 years, and continued to be used until the end of the order at the beginning of the XIV century, but with some changes.
